Rockin’ Robyn: What a Private Yacht Chef Really Cooks
Ask a chef which tests her more — a packed Saturday-night dinner rush or one guest aboard who changes her mind about the menu — and the answer tells you most of what you need to know about cooking at sea. Robyn Almodovar works both sides of that question. She won Chopped and Cutthroat Kitchen, finished as a finalist on Hell’s Kitchen, and she cooks as a private yacht chef for owners and charter guests who expect restaurant standards a long way from the nearest supplier.
“At the core, hospitality is the same whether you’re in a restaurant or aboard a luxury yacht; the guest always comes first,” Almodovar says. She opens her newest restaurant, Against All Odds, in Miami later this year. In between, she talked with us about what actually changes when the kitchen leaves the dock.

How Does a Private Yacht Chef Match a Restaurant Kitchen?
We asked how the customization and attention to detail aboard a yacht compare with what she offers in a traditional restaurant.
“Whether someone is dining aboard a private yacht or visiting one of my restaurants, the goal is to make them feel seen, valued, and taken care of,” she says. “The environment may be different, but the standard shouldn’t change.”
What Do Yacht Guests Actually Ask For?
Owners and charter guests get a reputation for extravagant requests. Almodovar says the memorable dishes rarely come from the top of the price list.
“When people think of luxury yachting, they immediately think of the most expensive ingredients in the world,” she says. “What’s funny is that some of the most memorable dishes aren’t necessarily the fanciest; they’re elevated versions of comfort food. One of my signature yacht dishes is homemade chicken nuggets, served with crème fraîche and caviar. Guests absolutely love it because it combines nostalgia with luxury. It’s familiar and fun.”

“A packed Saturday night dinner rush is intense, but I’d still say keeping a yacht guest happy when they suddenly want an entirely different menu is harder,” Almodovar says. “In a restaurant, you have a full kitchen, suppliers nearby, and systems in place to handle volume. On a yacht, you’re working with limited space, limited provisions, and you’re often miles away from the nearest grocery store.”
“At the end of the day, the guest doesn’t care about the limitations — they just want an incredible meal, and it’s your job to make it happen.”
