Chicken Salad Bites

Throw together a luau-inspired meal, featuring Chicken Salad Bites

These chicken salad bites come together very quickly and can feed a crowd as a light appetizer. Serve when the weather is warm.

Ingredients: 
1 ½ cups chopped pineapple
5 cups diced cooked chicken
1 cup diced water chestnuts
1 cup diced celery
½ cup chopped scallions
½ cup sliced almonds
20-30 Tostitos Scoops (or lettuce or cabbage cups) for serving
1 cup canned Chinese fried crunchy noodles (if unavailable, use ½ cup more almonds)

Chicken Salad Bites Dressing:
¾ cup sour cream
¾ cup mayonnaise
¼ cup sweet chutney or marmalade
1 tsp. curry powder
1 tsp. each salt and pepper
2 Tbsp. lemon juice
Combine ingredients in a bowl; mix well.

Directions: 
Combine first 6 ingredients in a bowl and set aside. Stir dressing into salad 1 hour before serving and refrigerate to blend flavors. When ready to serve, place a tablespoon of chicken salad on Scoops or lettuce or cabbage cups and sprinkle with Chinese noodles or almonds.

Salt Crusted Potatoes

Steak and potatoes go together like… steak and potatoes. These salt-crusted potatoes make the perfect accompaniment to any good piece of red meat.

If you are looking to impress your bedfellow this Valentines Day, this could do the trick.

Serves 4.

Ingredients:
2 lbs. red potatoes
1 tsp. salt
3 cups water
4 tbsp. butter
Pinch of parsley

Directions: 
Place the potatoes, salt, and water in a large saucepan over high heat and bring to boil. Cover and cook for 10-12 minutes, then uncover and cook for additional 10-15 minutes, stirring occasionally, until water is completely evaporated. Toss potatoes gently one
or two minutes until they develop a fine white salty crust. Add butter and parsley and toss to coat.

Easy Breakfast Strata

While we all love the holidays, we DON’T love the heaviness that comes with big Christmas roasts or holiday hams. So skip the sluggishness this year. Go with a lighter, bright holiday brunch. This customizable breakfast strata will keep you full without the heaviness.

Ingredients: 

4 large eggs
1/2 cup milk
1 tsp. mustard
¼ tsp. each salt and pepper
3 cups bread, cubed
3/4 cup cooked sausage, bacon or ham, diced
½ cup vegetables (onion, spinach, peppers), cooked to tender and chopped
1 cup shredded cheese (gouda, fontina, sharp cheddar or a mix)

Directions: 

Crack the eggs and place in a large bowl with milk, mustard and salt, and pepper; whisk until well combined. In a greased rectangular baking dish, place bread, meat, and vegetables. Pour the egg mixture over the bread and gently press the bread down to make sure it is covered in liquid.

Sprinkle cheese over the top and cover with foil. Let it rest on the counter for at least 30 minutes or overnight in the refrigerator. Keep covered and bake for 30 minutes at 350°F. Uncover the strata, and continue baking until the center is firm (15-20 minutes). Remove from the oven and let cool at least 5 minutes. Cut and serve.

While we all love the holidays, we DON’T love the heaviness that comes with big Christmas roasts or holiday hams. So skip the sluggishness this year. Go with a lighter, bright holiday brunch. This festive fruit salad is a great side dish to the main course.

It’s incredibly easy to customize according to your tastes.

Ingredients:  

8 cups assorted fruit slices and chunks (apple, pear, banana, kiwi, orange, peach, plum, berries)
1 tbsp. honey
3 tbsp. lime juice
½ cup pomegranate seeds (substitute sliced almonds or pumpkin seeds)
1 tbsp. mint leaves or a pinch of dried mint

Directions: 

In a large bowl combine fruit. In a small bowl whisk together honey, lime juice, and pomegranate seeds. Pour over salad and gently toss. Top with mint and serve immediately.

Smoked Salmon Toasts

Simple and elegant, these smoked salmon toasts will be the perfect complement to any brunch you host this season. You can use leftovers (likely you won’t though) for a similar light lunch the next day. No ripe avocados onboard? Try it with cream cheese for classic brunch fare.

Ingredients:

16 slices smoked salmon
3 avocados, pitted, peeled and sliced
1 red onion, thinly sliced
1/4 cup capers, drained
¼ tsp. each salt and pepper
4 toasted bread slices
2 lemons, quartered

Directions: 

Arrange the smoked salmon slices on a platter and top with avocado slices, onions, and capers. Sprinkle with salt and pepper. To serve, spread toast with avocado, then salmon, onions and capers. Drizzle with lemon juice.

Tired of the old holiday standard fare? We’ve grown weary of heavy-handed feasts of roasted birds and piles of potatoes. Mix things up this year and host a holiday brunch. You’ll feel lighter and brighter with this Eggnog Latte.

Ingredients: 

4 cups strong hot coffee or espresso
2 cups eggnog
2 cups milk, warmed
2 oz. rum
Whipped cream
Ground nutmeg

Directions: 

In a pitcher combine hot coffee, eggnog, milk, and rum. Pour mixture into four coffee mugs and top with whipped cream and a sprinkle of nutmeg.

Skip the heavy holiday hams and roasts. If you’re cruising over the holidays, switch it up. Plan a festive champagne brunch for Christmas morning with this decadent Billionaires Bacon.

Ingredients: 

1/2 cup light brown sugar
1/2 lb. bacon
1/2 tsp. pepper

Directions: 

Put sugar onto a plate. Coat both sides of each strip of bacon in sugar, firmly pressing sugar into each strip. Place bacon strips in a single layer on a foil-lined sheet pan (some sugar will fall off). Sprinkle bacon evenly with pepper.

Place pan in preheated 425°F oven or on a grill, turning once until browned and lacquered for about 15 minutes. Transfer to a lightly oiled platter to cool. If bacon is not crisp upon cooling, bake in oven 5-8 minutes more watching closely so the sugar doesn’t burn. Break slices into thirds and serve.

Mango Salsa is super versatile and delicious on almost anything. It will be your favorite summer condiment.

We’re halfway through mango season in Florida, so there is no time like to present to make up some Mango Salsa. Recipe serves four, so be sure to double it!

Ingredients: 

1 mango, peeled and diced
1/2 cup peeled, diced cucumber
1 Tbsp. finely chopped jalapeno
⅓ cup diced red onion
1 Tbsp. lime juice
⅓ cup chopped cilantro (optional)
1/4 tsp. each salt and pepper

Directions:

Combine all ingredients in a bowl and mix well. Serve.

Nothing says “Father’s Day” like barbeque. Make it easy on dad and help him grill out with this hot dog bar on the aft deck.

This quick and easy Hot Dog Bar serves four. Add more or less depending on how many show up to enjoy your boat!

Ingredients: 
4 pork, chicken or turkey sausages
4 hot dogs
8 hot dog rolls

Optional Condiments:

Mustard
Relish
Ketchup
Pickled jalapenos
Pickle spears
Chili (canned or homemade)
Quick Sauerkraut
Creamy Coleslaw
Onions, tomatoes, cheese, bacon bits (from the salad bar)

Fry or grill sausages, turning frequently, until golden brown and cooked through (10-15 minutes). Boil, sauté or grill hot dogs until heated through (4-5 minutes). If you wish, heat hot dog rolls on the grill or in the oven until warmed.

Place sausages and hot dogs on a platter and hot dog rolls in a napkin-lined basket. Guests can construct their own dog or sausage creations with the condiments of their choosing.

Ingredients:

3 cups cabbage, thinly sliced
1/2 cup onion, sliced
1/4 cup vinegar
1 Tbsp. apple juice
⅓ Tbsp. caraway seeds (optional)
⅔ Tbsp. salt

Directions: 

Mix ingredients in a microwave-safe bowl. Cover with plastic wrap and seal edges. Microwave on high 4-5 minutes. Let sit covered for 15 minutes and then refrigerate; reheat for serving.

This creamy coleslaw is a great accompaniment to any outdoor grilling dish. It is especially good with summer meals like hamburgers or hot dogs. Best served cold.

Ingredients: 

1/4 cup mayonnaise
3/4 Tbsp. mustard
1 Tbsp. sugar
1 Tbsp. vinegar
1 Tbsp. buttermilk, sour cream or Greek yogurt
3/4 tsp. salt
1/2 tsp. pepper
2 cups shredded cabbage
1/2 cup shredded carrot

Directions: 

For dressing, mix the first seven ingredients well in a small bowl. Place cabbage and carrots in medium bowl and blend. Add the dressing, toss well and refrigerate until ready to serve.

Baked Bahamian Grouper

Quick, festive and very Bahamian! This Baked Bahamian Grouper is sure to please your onboard guests. Recipe serves four.

Ingredients

3 Tbsp. olive oil
2 small onions, peeled and sliced
1 sweet bell pepper, seeded, cored, and cut into strips
.3/4 cup canned crushed tomatoes
5 Tbsp. tomato paste
1/4 tsp. each salt and pepper
2 lbs. skinless grouper filet, cut into 4 servings
1 tsp. lemon pepper (or 1/2tsp. lemon zest, 1/2tsp. black pepper, 1/4 tsp. salt)
2-3 pinches cayenne or one chopped 1 jalapeno pepper

Directions

Preheat oven to 350 degrees. Heat oil in a large skillet over medium heat. Add onions and peppers; cook until soft, stirring often (about 10 minutes). Stir in tomatoes and paste, reduce heat to medium-low and simmer, stirring often, until onions are very soft (about 15 minutes).

Season sauce with salt and pepper. Place grouper in a baking dish. Season fish with lemon pepper and cayenne. Top with sauce and bake until fish is cooked through, about 15-20 minutes. Serve over plain rice.

Ingredients: 
2 cups pineapple, diced
1 can lychee, drained (optional)
2 cups orange segments
1 cup shredded sweetened coconut

Directions: 
Place pineapple, lychee and orange segments into a large glass bowl along with a few tablespoons of their juices. Add coconut and gently toss together. Cover and refrigerate for at least 2 hours or up to 8 hours. Serve chilled.

Ingredients:
5 oz. blue cheese
5 oz. softened cream cheese
½ cup black sesame or poppy seeds

Serve with: 
crackers, fruit jam or sliced fruit (apples, pears, nectarines, peaches, etc.)

Directions:
Mix blue cheese with softened cream cheese. Roll cheese into a log, and wrap in plastic; refrigerate until firm (about 2 hours). Unwrap and roll log in seeds until completely covered. To serve, place cheese and fruit on plate, and put crackers in a bowl or basket.
