This tropical Arugula Pineapple Salad is refreshing and fun. Serve to your onboard guest before dinner or as a light lunch.
6 cups arugula or preferred salad greens
1/4 cup pineapple, peeled, cored, and chopped
1/4 cup red onion, thinly sliced
1/4 cup chopped cilantro (optional)
3 Tbsp. vinegar
1 Tbsp. oil
1/2 tsp. sugar
1/4 tsp. each salt and pepper
Mix arugula, pineapple, red onion, and cilantro in a salad bowl. Whisk vinegar, oil, sugar, salt, and pepper in a small bowl until well blended. Pour dressing over salad and toss to coat.
