Welcome spring with a southern influenced menu that is truly divine. Enjoy!

 

Granny Smith Apple and Blue Cheese Salad

Preparation time: 30 minutes
Cooking time: 20 minutes
Serves: 6-8

5 Granny Smith apples, peeled, chopped
1 c. white wine
1 c. apple juice
3 Tbsp. sugar
½ c. olive oil
3 Tbsp. apple cider vinegar
Juice of one lemon
14 oz. mixed greens
4 oz. blue cheese, crumbled
½ c. walnuts, toasted

Place 4 of the 5 apples in a medium saucepan. Pour in wine and apple juice, add sugar and heat over medium heat. Bring to a boil, then simmer 20 minutes until liquid is reduced by half. Strain through sieve, discard the solids. Add oil, vinegar, lemon, and whisk together. In a salad bowl, combine greens, additional chopped apple, blue cheese, and walnuts. Toss with dressing.

 

Low Country Shrimp and Sausage Boil


Preparation time: 30 minutes
Cooking time: 40 minutes
Serves: 6-8

8 oz. bacon
2 Tbsp. butter
1 onion, chopped
3 garlic cloves, minced
1 tsp. seafood seasoning
2 andouille sausage links, chopped
6 c. chicken broth
1 ½ lbs. baby red potatoes, cubed
1 ½ c. frozen corn
¾ c. roasted red peppers, chopped
1 ½ lbs. large shrimp, peeled, deveined
½ c. fresh parsley, chopped

In large pot, cook bacon until crisp. Remove, set aside and chop. Add butter to drippings, sauté onion and garlic. Add seasoning and sausage, cook 10 minutes. Add broth and potatoes, bring to boil then simmer 20 minutes. Stir in corn, peppers and shrimp, and cook 5 minutes. Remove from heat, stir in parsley. Serve into bowls with bacon as garnish.

 

Mini Banana Cream Parfaits

Preparation time: 45 minutes
Cooking time: 20 minutes
Chilling time: 2 hours
Serves: 6-8

1 c. graham cracker crumbs
1⁄3 c. sweetened shredded coconut
¼ c. butter, melted
4 Tbsp. sugar
1 box vanilla pudding mix
2 c. milk
5-6 bananas
1 c. whipping cream

In a medium bowl, combine crumbs, coconut, butter and 2 tablespoons sugar. Mix together until crumbs moistened. Place 3 tablespoons crumbs into bottom of parfait cups, either miniature or regular sized. Make pudding according to package instructions using 2 cups milk. Slice bananas, dividing them between parfait cups. Pour pudding into cups, dividing evenly. Whip cream with remaining 2 tablespoons sugar until stiff. Top parfaits with cream, refrigerate 2 hours.

 

Sweet Tea Martini

Preparation time: 15 minutes
Serves: 4

3 oz. tea fl avored vodka, such as Firefl y or
Absolut Wild Tea
3 oz. citron vodka
5 oz. lemonade
4 oz. s weet tea
1 lemon, cut in wedges
Superfi ne sugar
Fresh mint

Pour first 4 ingredients over ice in a large martini shaker. Shake vigorously. Rub lemon wedge around rim of martini glass and dip in superfine sugar. Pour martini into glass and garnish with mint.
