Mixed Greens with Gruyere and Grapes
Preparation time: 20 minutes
Serves: 6

12 oz. mixed baby greens
4 oz. Gruyere cheese, shredded
1⁄3 c. slivered almonds, toasted
5 bacon slices, cooked, chopped
½ c. red seedless grapes, halved
½ c. extra virgin olive oil
1 Tbsp. lemon juice
2 Tbsp. red wine vinegar
1 Tbsp. honey
1 clove garlic, crushed

In a large bowl, combine mixed greens with next 4 ingredients. In a small bowl, whisk together oil, vinegar, lemon, honey, and garlic. Season with salt and pepper. Pour dressing over salad using just enough to coat leaves and reserve the rest for another use.

Blackened Swordfish Steaks with Black-Eyed Pea Salsa
Cooking time: 12 minutes
Serves: 6

6 4-6 oz. swordfish steaks
¼ c. extra virgin olive oil
½ tsp. coarse salt
½ tsp. cracked pepper
1 tsp. cumin
1⁄8 tsp. chili powder
Dash cayenne pepper
1 c. canned black eye peas,
rinsed and drained
½ c. red pepper, chopped
3 scallions, sliced
1 Jalapeño pepper,
seeds removed, diced
2 Tbsp. lime juice
¼ c. fresh cilantro or mint, chopped

Rub swordfish with 2 Tbsp. olive oil. In a small bowl, combine salt, pepper and the next 3 ingredients. Rub seasoning over swordfish. Let sit 15 minutes. Grill steaks over medium high heat about 5 minutes per side. In a small bowl, combine peas with remaining ingredients. Season with salt and pepper and serve on top of fish.

Angel Food Cake with Lime and Coconut
Preparation time: 15 minutes
Cooking time: 10 minutes

1 purchased angel food cake
½ c. sugar
4 Tbsp. fresh lime juice
½ c. sweetened, flaked coconut
½ c. powdered sugar

In a small saucepan, combine 3 Tbsp. lime juice with sugar. Stir over medium heat until sugar dissolves. Brush syrup all over cake. Press coconut onto top and sides of cake. Combine powdered sugar with remaining lime juice adding more juice to create a glaze. Stir until smooth. Drizzle glaze onto cake. Let sit 10 minutes.

Pomegranate Champagne Cocktail
Preparation time: 2 minutes
Serves: 6

6 oz. Pomegranate juice or Pom-Cherry juice
3 oz. Chambord
1 bottle champagne

In 6 champagne flutes, pour 1 oz. pomegranate juice, ½ oz. Chambord, and top with champagne.
