Mango Curry Cornbread
Preparation time: 20 minutes Cooking time: 30 minutes Serves: 6-8 1 cup flour ¾ cup cornmeal ¾ tsp. salt 1 egg, beaten 1 ½ tbsp. baking powder ½ cup golden raisins ¼ cup melted butter ½ cup milk ½ cup mango nectar 1 tsp. curry powderPreheat oven to 350º. Mix together flour, cornmeal, salt, baking powder, and curry. In small bowl, whisk together egg, butter, milk, and mango nectar. Fold in raisins. Add wet mix to dry mixture. Pour into eight-inch square pan and bake 25 to 30 minutes, until golden.
